FlammkuchenThis flat bread comes from the Alsace region of France where it is known as either Flammkuchen or tarte flambée, depending on if you speak German of French.  My German friend introduced this to me, so we’ll go with Flammkuchen.  It’s really simple, here’s what you need:

Ingredients:

  • Lump of dough between the size of a baseball and softball.
  • Crème fraîche or sour cream. I suppose quark or mascarpone could work too.  Crème fraîche is a bit hard to come by where I live so I went with sour cream.
  • 1 small onion
  • 4 slices of bacon
  • Salt and pepper

Directions:

  • Preheat your oven (with a pizza stone or a floor tile in it) as hot as you can make it for about 30 minutes.
  • Stretch out the dough like a pizza, making it as thin as you can. Put it on a floured pizza peel. I use a piece of cardboard.
  • Slice onions into half-circles
  • Wrap bacon in paper towels and microwave fore 1:30-1:45 minutes, then chop it up.
  • Spread the cream onto the dough and season with salt and pepper.
  • Put the onions and bacon on.
  • Slide into the oven for 7-8 minutes.
  • Cut into rectangles.
